How to cash out tips nightly and then reconcile on a weekly payroll?

My client is a restaurant owner. They don't withhold the taxes before paying the tips. Can it be tracked with a POS? What would you do?


It sounds very complicated because of all the variables.
In my experience A POS won’t solve your problem because it tracks just cc tips although there might be solutions that work.

What I suggest is that the employees get their tips when their shift is over and CC tips on Bi-Weekly payroll.
